Pisco is the Traditional Spirit of Peru (and Chile). Chile and Peru both claim the Pisco Sour as their national drink.
On Bartender Journey Podcast # 159 we talk to Johnny Schuler from the Peruvian Pisco Porton about this wonderful Spirit.
Pisco is made from grapes and can be classified as an unaged Brandy. Interestingly, Peruvian Pisco is "distilled to proof", which is to say that it is never diluted after it is distilled. It enters the bottle directly at its distillation strength. This is a bit unusual in the distilling industry.
Cocktail of the Week:
Strain out ice with Hawthorn Strainer.
Shake again without ice, (“dry shake”).
Pour into chilled cocktail couple.
Add 3 drops Angostura Bitters.Use small knife to make a design.
This method of shaking a cocktail that contains egg white first WITH ice, then removing the ice and shaking again WITHOUT ice is known as a "Reverse Dry Shake".
